Garlic Parmesan Baked Halibut

Our garlic butter herb scallop recipe last week was delicious, and we love garlic (who doesn’t?), so this week we’re elevating our tastebuds and bringing you a recipe that not only has garlic, but parmesan as well! Double delicious!

Pacific Halibut are the largest flatfish found on the continental shelf, from California to the Bering Sea. Halibut have flat, diamond-shaped bodies, typically from 10 to 50 pounds – but they can weigh up to 500 pounds and grow to eight feet long. The majority of halibut are caught in Alaskan waters from mid-March to mid-November. These halibuts are hook and line caught.

Halibut is highly regarded for its delicate sweetness, pale colour, and firm flaky meat. It is a great source of protein and minerals and also is low in sodium, fat, and calories. Halibut is a delicious and sustainable fish option.

Halibut pairs well with any dry white wine. According to WinePros, Chardonnay is the optimal wine partner with halibut because Chardonnay exhibits both creaminess and crispness, as well as vivid citrus and stone fruit aromas, making it ideal for pairing with a lean fish such as halibut. Sauvignon Blanc is another excellent wine to pair with halibut because of it’s citrus and herbaceous aromas, as well as wines such as Viognier or Pinot Noir, as these wines enhance the taste profile of halibut.

PREP TIME: 5 MINUTES | COOK TIME: 8 MINUTES

INGREDIENTS

Topping:

  • ¼ cup butter, softened
  • ¼ cup mayonnaise
  • ½ cup freshly grated Parmesan cheese
  • 2 Tbsp green onion, finely chopped
  • 4-6 cloves garlic, crushed
  • Dash of Tabasco

Plus:

  • Salt and pepper, to taste
  • ½ lemon, juiced
  • 4 halibut filets (~1″ thick)

INSTRUCTIONS

1. Preheat oven to 450. Season halibut with salt, pepper and a squeeze of lemon juice.

2. Place filets in a baking dish. Bake for 6 minutes.

3. Mix all topping ingredients together. Remove halibut from oven and spread Parmesan mixture over top and sides of fish. Turn oven to broil and cook for two to three minutes, until the tops are lightly browned. Serve immediately with rice and veggies.
