Slow Roasted King Salmon

What’s better than one amazing dinner? Two, actually.

Slow roasted king salmon is a great meal to have on a busy week night when you and your significant other want something simple and delicious.

It cooks in the oven at a slow and consistent heat so you don’t have to worry about it burning or drying out. Slow-roasting always keeps things moist so this recipe is pretty foolproof!

While the salmon is in the oven you can also easily multitask and work on your side dishes. It’s great for entertaining too because you can get the king salmon going early before guests arrive and it will be ready by dinnertime.

INGREDIENTS

  • 1.5 lbs wild king salmon pin bones removed with a tweezers
  • handful of herbs, minced such as parsley, basil, oregano, thyme, tarragon
  • sea salt and fresh ground pepper

INSTRUCTIONS

Preheat oven to 200 degrees.

Place a rectangular pan filled with water on the bottom rack of the oven. This will help create a steamy environment for the fish to cook in.

Rub the salmon with the chopped herbs and sprinkle generously with sea salt and pepper. Place on a baking sheet and slow roast for for 60-75 minutes, or until just done. The fish will still be slightly wiggly in the center.

Serve immediately or at room temperature. This fish will keep for up to three hours at room temperature, making it ideal for crowds and picnics!
